如何準備香辣甜椒青蔥香菜青檸牛油煎安康魚?

準備時間:

材料:

  • 60 克 牛油
  • 1 顆青檸(只取汁)
  • 2 片安康魚柳(每片約 150 克),去皮去骨
  • 50 毫升 芥花籽油
  • 2 湯匙 新鮮香菜,切碎
  • 1 根青蔥,切碎
  • 2 湯匙 甜辣醬
  • 30 毫升 清水

食用搭配

  • 300 克 印度香米(蒸熟)

製作說明:

  1. 在大平底鍋中以大火加熱芥花籽油。放入安康魚後轉中火,每面煎約 4 分鐘,煎熟後保溫備用。
  2. 在另一個小鍋中加入牛油、水及甜辣醬,加熱至煮沸。加入青檸汁與切碎的青蔥,再煮約 30 秒,然後加入切碎的香菜,立即關火。
  3. 將醬汁淋在安康魚上,搭配蒸香米飯一起享用。

燒烤小貼士

  1. 若想用燒烤方式烹調安康魚,務必先將燒烤爐預熱至高溫,讓魚肉表面迅速封住,避免黏網。先將魚塊均勻調味,兩面塗上橄欖油,再放上熱燒烤網,每面烤 3 至 4 分鐘即可。
  2. 另一種方式是將魚柳放入錫紙包中,加少許牛油、調味料及香草包好,再放上燒烤爐烤 6 至 8 分鐘。
