如何準備甜薯燉羊膝?
材料:
- 3 隻 羊後膝肉(Lamb Hind Shanks)
- 1 又 1/2 湯匙 番茄醬(Tomato Purée)
製作說明:
- 將烤箱預熱至 160°C(風扇模式 140°C)/ 瓦斯爐第 3 段火。在厚底燉鍋中加熱 1 湯匙油,將羊膝抹上調味料,分兩批煎至四面上色,第二批時加入剩下的油。將羊膝取出,加入洋蔥,大火快炒約 30 秒,接著加入薑末、大蒜和切碎的辣椒,轉小火繼續炒 1 分鐘。加入 1 湯匙黑糖拌炒,然後放入八角、香茅、羊高湯、番茄醬及調味料,煮滾。
- 蓋上鍋蓋,放入烤箱燉煮 1 小時 30 分鐘,再加入地瓜,續烤 1 小時。羊膝應該要燉到完全軟嫩、幾乎可從骨頭上滑落。最後加入魚露、萊姆汁與 1 茶匙黑糖調味,拌勻提味,盛盤時撒上薄荷葉、羅勒葉和辣椒絲即可享用。
