煎煮巴拉門迪魚柳配橙王馬鈴薯和菠菜食譜

- 預熱烤箱至 475°F(約 245°C)。將新鮮蔬菜清洗乾淨並擦乾。將馬鈴薯切成中等大小的丁。將大蒜去皮,切碎 2 瓣,將剩餘的 1 瓣切碎並用刀背壓成泥狀(或使用刨絲器)。將青蔥去皮並切碎。
- 將馬鈴薯放在烤盤上,淋上橄欖油,撒上鹽和胡椒,攪拌均勻。將馬鈴薯排成單層,烤 28 至 30 分鐘,直到金黃且用叉子能輕鬆刺穿。取出烤箱。
- 當馬鈴薯烤約 5 分鐘時,在小碗中,將美乃滋、白葡萄酒醋的一半和蒜泥混合,根據口味加入鹽和胡椒調味。
- 在馬鈴薯繼續烤的同時,在大煎鍋中(如果有不粘鍋更好),用中高火加熱 1 湯匙橄欖油。分批加入菠菜,撒上鹽和胡椒。煮 2 至 3 分鐘,偶爾攪拌,直到菠菜變軟。將煮好的菠菜轉移到濾網中,放在碗上。用湯匙壓下煮熟的菠菜,盡量排出液體,並丟棄液體。將菠菜轉移到切菜板上,細切。擦乾煎鍋。
- 在馬鈴薯繼續烤的同時,用紙巾將鯛魚柳拍乾,兩面撒上鹽和胡椒調味。在同一煎鍋中,將 1 湯匙橄欖油加熱至中高火,直到變熱。加入調味好的魚柳,皮朝下煎。煎 3 至 5 分鐘,直到魚皮變脆。翻面再煎 2 至 3 分鐘,或直到微微變金黃並熟透。將魚柳轉移到盤子中,放在溫暖處靜置。擦乾煎鍋。
- 在馬鈴薯繼續烤的同時,在同一煎鍋中,加熱 1 湯匙橄欖油至中高火。加入切碎的青蔥和大蒜,撒上鹽和胡椒。煮 1 至 2 分鐘,偶爾攪拌,直到青蔥和大蒜變軟並散發香氣。加入切碎的菠菜和剩餘的白葡萄酒醋,撒上鹽和胡椒。煮 1 至 2 分鐘,偶爾攪拌,直到菠菜與醬汁混合並加熱透徹。將煮好的菠菜、烤馬鈴薯和煮熟的鯛魚柳分配到 4 份盤子中,搭配蒜香美乃滋一起上桌。享用!
