- 使用鋒利的刀子在冰過的鴨胸脂肪層上劃上 1/2 英寸的網格,注意不要刺穿肉部。
- 將鴨胸拍乾,並用猶太鹽和黑胡椒調味。將調味料均勻擦入皮膚中。
- 在冷的重型碳鋼鍋或鑄鐵鍋中,淋上薄薄一層菜籽油,然後將鴨胸放入鍋中,皮朝下,開中火加熱。輕輕壓下鴨胸,讓鴨皮充分接觸鍋底。
- 煮約 20 分鐘,或直到鴨皮變脆且大部分脂肪被煎出。
- 將火調至低溫,小心地將鴨胸翻面,並繼續煮鴨肉的一面。立即在熱皮上撒上一些鹽。
- 根據鴨胸的大小,將肉面煮 2 到 5 分鐘,直到內部溫度達到 125°F 至 130°F(約 52°C 至 54°C),即為五分熟。
- 將鴨胸從鍋中取出,皮朝上放置 10 分鐘,靜置後再切片上桌。
- 大約 80% 的時間應該在鴨皮上煮,剩下的幾分鐘則煮鴨肉面。
