香煎帶子佐檸檬胡椒蘆筍與生菜沙律食譜

材料
製作說明
- 將帶子用冷水沖洗後,用紙巾擦乾直至無殘留水分。靜置至室溫。
- 將烤箱預熱至200°C。將蘆筍與橄欖油、檸檬汁、檸檬皮屑、鹽和胡椒拌勻後鋪於烤盤。烘烤9-10分鐘至軟嫩。
- 取小碗混合香醋、紅糖及少許鹽與胡椒,攪打均勻後緩緩加入橄欖油至完全融合。
- 中碗拌入沙律菜、碎菲達乳酪、烤杏仁片與牛油果薄片,淋上醬汁後靜置備用。
- 帶子撒鹽與胡椒調味,輕拍薄粉。取不沾鍋以中高火預熱,淋少許橄欖油。將帶子每面煎2-3分鐘至金黃色。
- 取出帶子,原鍋加入奶油與蒜末翻炒1分鐘。將帶子放回鍋中,擠入檸檬汁,撒上香蔥末。佐烤蘆筍與沙律享用。
