    材料

    • 8 塊豬里肌排
    • 鹽、黑胡椒(適量)
    • 1 茶匙乾燥鼠尾草
    • 2 湯匙奶油

    製作說明

    1. 首先,先為豬里肌排調味。要大方地使用黑胡椒與鹽,再撒上一些乾燥鼠尾草。調味的時候不要吝嗇,確保每一塊豬排的兩面都均勻調味後再繼續下一步。
    2. 在平底鍋中以中大火融化一湯匙奶油。我建議等到奶油開始起泡並略為變色,這表示鍋子的整體溫度已經夠高。這道豬里肌排食譜使用的是奶油,而不是噴油或食用油。用奶油煎豬排能帶來豐富的風味,我發現這個做法能讓豬排更多汁。
    3. 當鍋子變熱、奶油完全融化並開始加熱時,就可以放入豬排。一次可煎一到兩塊,但請避免鍋內過於擁擠。讓豬排煎至底部略微上色出現金黃痕跡後再翻面,另一面也同樣煎熟。每一面大約需要煎 4 到 5 分鐘。
