製作說明
- 將所有醃料材料與 1 茶匙鹽一同放入大杵臼中搗碎,或用迷你切碎機攪打成鬆散的糊狀。將每塊雞肉切幾刀,然後放入碗中,均勻塗抹醃料。覆蓋並冷藏至少 1 小時,或最多 24 小時。
- 預熱烤箱至 220°C(風扇模式 200°C / 瓦斯 7 檔)。將雞肉與醃料及馬鈴薯一起放入烤盤中,拌勻後將雞肉擺在馬鈴薯上,雞腿皮朝上。烤 35 至 40 分鐘,直到雞肉表面金黃。
- 從烤箱中取出烤盤,將甜椒與馬鈴薯拌勻,將雞肉用烤盤中的汁液刷上,並翻動雞腿。將車厘茄放在雞肉間,再烤 20 至 25 分鐘,直到雞肉熟透,表皮酥脆,蔬菜呈現美味的烤色。最後撒上香菜和些許海鹽,即可上桌,旁邊搭配塗了黃油的玉米棒。
