- 1/2 杯 雞高湯(若為素食版本,可使用蔬菜高湯或純水代替)
製作說明
- 烹煮洋蔥.
- 在一個煎鍋中,用中大火加熱 2 湯匙奶油。當奶油泡沫消退後,加入切好的洋蔥。將洋蔥炒煮幾分鐘,直到開始變成金黃色。
- 加入豌豆和高湯,將混合物煮至滾沸。根據口味調整鹽分,必要時加入鹽(如果高湯已經有鹹味,可能不需要再加鹽)。
- 如果需要,可以加入一撮糖,來提升豌豆本身的甜味。
- 減少高湯,加入剩餘的奶油和黑胡椒
- 經常攪拌豌豆和洋蔥—你希望高湯減少約一半,但不要煮過頭,讓豌豆過熟。
- 當高湯減少後,關火,加入剩下的奶油和一些黑胡椒,立即上桌。
- 如果需要,可以撒上一些切片的新鮮薄荷作為裝飾。
