製作說明
- 需提前兩天準備此食譜。
- 為製作土佐醬油,先將清酒與味醂倒入平底鍋中加熱,煮沸1分鐘。從火爐上移開後,立即加入醬油、昆布和柴魚片。靜置一晚,然後用細紗布過濾。將醬汁倒入已消毒的玻璃瓶中,再靜置一晚。(此醬汁經過瓶裝後會持續熟成,風味將隨時間變得更溫和濃郁,可保存數月。)
- 將白蘿蔔細磨,放入碗中靜置10分鐘。
- 同時,將牛排均勻撒鹽調味。加熱厚底煎鍋至冒煙,用少量和牛脂塗抹鍋面。
- 牛排雙面煎至五分熟或偏中等熟度,煎好後在溫暖、無風處靜置5分鐘。
- 將牛排切片,放入預熱的盤中。
- 將檸檬切片。磨些山葵放在檸檬片上。輕擠白蘿蔔的多餘水分,並將磨好的白蘿蔔放在檸檬片旁。搭配土佐醬油一同沾食。
