製作說明
- 先製作香蒜醬(Chimichurri)。將大蒜和香草(可用手工或食物處理機)切細後放入碗中。加入奧勒岡葉、辣椒碎和醋,攪拌均勻。接著一邊攪拌一邊慢慢倒入4湯匙橄欖油,直到呈現稀稀的醬汁狀態為止。以鹽和黑胡椒調味,然後蓋上保鮮膜,放一旁待用。
- 將大平底鍋放在大火上加熱至非常高溫。與此同時,將牛排兩面均勻灑上鹽與黑胡椒,並輕刷上橄欖油。當鍋熱到冒煙時,放入牛排,依照個人口味煎至所需熟度。以厚度約2公分的牛排來說,雙面各煎約2分鐘可達五分熟。煎好後讓牛排靜置,時間至少為烹調時間的一半。搭配香蒜醬與法國麵包或薯條一起享用,吸取美味肉汁。
