如何準備烤牛肋排(Galbi)?
材料:
材料
- 炒香的白芝麻、切碎的蔥、紫蘇葉、泡菜和辣椒醬(gochujang),用來搭配
醃料
製作說明:
- 將所有醃料材料放入一個大的非反應性碗中,混合均勻。加入肋排,翻轉使其均勻裹上醃料。用塑膠膜蓋住,放入冰箱冷藏過夜。
- 從醃料中取出肋排,丟掉多餘的醃料。將燒烤架或燒烤平底鍋加熱至高溫。將肋排撒上鹽,並翻面煮至兩面微焦,約 4 分鐘,或直到熟透。
- 撒上芝麻和蔥花,並與紫蘇葉、泡菜和辣椒醬一起食用,作為包裹食用。
註
- 這種切法是沿著骨頭橫切肋排,製成薄片,方便快速烹煮。這種切法稱為 flanken,在部分亞洲肉店會販售作為「韓式牛肋排」。
- 紫蘇葉是來自薄荷科的大圓葉,可在某些亞洲食品店找到。
