如何準備仁當牛肉?
材料:
- 新鮮高良薑 200克,粗略切碎(如果找不到,可以使用高良薑醬或高良薑泥)

製作說明:
- 將滾水倒入乾辣椒中,浸泡5-10分鐘。
- 取出辣椒籽,粗略切碎,並將其與其餘的醬料材料及少許水一同放入攪拌機中。攪拌均勻至光滑。
- 將牛肉用鹽和胡椒調味,並在大炖鍋中加熱1湯匙油。將牛肉煎至四面呈深棕色。如有需要,可分批煎制,並將煎好的牛肉放入碗中,繼續煎其他部分。
- 再加入1湯匙油至鍋中,將仁當醬以小火炒香,約5分鐘。加入椰漿、八角和肉桂,煮至湯汁開始滾沸。
- 刮下鍋底任何附著的食材。將牛肉放回鍋中,並加入足夠的水來覆蓋牛肉。加蓋,轉小火燉煮2½至3小時,或直到牛肉非常嫩滑。
- 同時,製作脆洋蔥:將小紅蔥頭的圓環分開。將其浸泡在牛奶中約10分鐘,然後瀝乾,並將其裹上調味麵粉。
