帕瑪森芝士燴飯配褐奶油帶子食譜

  • 2 大匙奶油

  • 2 瓣大蒜或香蔥,切碎

  • 1 杯 阿爾伯利奧

  • 1/2 杯白酒

  • 4 杯雞湯或蔬菜湯

  • 1/2 杯磨碎的帕瑪森芝士

  • 鹽和胡椒適量

帶子

  • 1 大匙油

  • 12 帶子,拍幹

  • 鹽適量

炒菠菜

  • 1 大匙油

  • 2 瓣大蒜,切碎

  • 4 杯新鮮菠菜或羽衣甘藍

褐奶油

  • 4 大匙黃油

做法說明

  1. 在一個大的不沾鍋中,用中火加熱,融化奶油加入蒜蓉或蔥末,翻炒一兩分鐘,直到變軟散發出香味

  1. 在平底鍋中加入阿爾伯利奧米,攪拌使其裹上奶油加入白酒,享受嗞嗞聲

  1. 逐漸加入雞湯或蔬菜湯,每次半杯,每次加入後都要攪拌並小火慢燉,直到米飯變得柔軟細膩如果需要更細膩的口感,可添加更多高湯

  1. 加入磨碎的帕瑪森芝士攪拌,並加入鹽和胡椒調味

  1. 在另一個不沾鍋中,用中火加熱油用紙巾將帶子拍乾並撒上鹽帶子放入燒熱的平底鍋中,每面煎 2-3 分鐘,直到帶子外表呈金黃色,內部不透明將烤好的帶子移到鋪有紙巾的盤子裡,吸乾多餘的油

  1. 在製作燴飯的同一平底鍋中,以中小火加熱油加入蒜蓉,攪拌一分鐘釋放其味道在平底鍋中加入菠菜或羽衣甘藍,攪拌至軟

  1. 在一個乾淨的平底鍋中,用中火融化奶油不斷攪拌,直到黃油變成金黃色並離火後,將其倒入保溫碗中稍涼

  1. 上菜時,將一份燴飯裝盤,上面放上烤帶子再加一份炒菠菜或羽衣甘藍在燴飯、帶子和羽衣甘藍上淋上奶油

材料:

For the Risotto

  • 2 tablespoons butter
  • 2 cloves garlic or shallots, minced
  • 1 cup arborio rice
  • 1/2 cup white wine
  • 4 cups chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

For the Seared Scallops

  • 1 tablespoon oil
  • 12 scallops, patted dry
  • Salt to taste

For the Sautéed Spinach

  • 1 tablespoon oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach or kale

For the Brown Butter

  • 4 tablespoons butter

製作說明:

  1. In a large non-stick skillet over medium heat, melt the butter. Add the minced garlic or shallots and sauté for a minute or two until soft and fragrant.
  2. Add the arborio rice to the skillet and stir to coat it with butter. Add the white wine and enjoy the sizzles.
  3. Gradually add the chicken or vegetable broth, 1/2 cup at a time, stirring and simmering after each addition until the rice is soft and creamy. Add more broth if needed for a creamier texture.
  4. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  5. In a separate non-stick skillet, heat the oil over medium heat. Pat the scallops dry with paper towels and sprinkle them with salt. Add the scallops to the hot skillet and sear them for 2-3 minutes on each side until they have a golden brown exterior and an opaque inside. Transfer the seared scallops to a paper towel-lined plate to absorb excess oil.
  6. In the same skillet used for the risotto, heat the oil over medium-low heat. Add the minced garlic and stir for a minute to release its flavor. Add the spinach or kale to the skillet and stir until wilted.
  7. In a clean skillet, melt the butter over medium heat. Stir it continuously until it turns golden and foamy. Remove from heat and transfer to a heat-proof bowl to cool slightly.
  8. To serve, plate a portion of the risotto and top it with seared scallops. Add a serving of sautéed spinach or kale. Drizzle the brown butter over the risotto, scallops, and greens.
