HOW TO PREPARE FESTIVE PRAWN COCKTAIL?
2 X OCEAN CATCH PREMIUM AUSTRALIAN X-LARGE TIGER PRAWNS (6-8 PRAWNS PER 500G, 14CM LONG)

2 x OCEAN CATCH PREMIUM AUSTRALIAN X-LARGE TIGER PRAWNS (6-8 PRAWNS PER 500G, 14CM LONG)
50g tomato ketchup
1 tsp Worcestershire sauce
1 tsp lemon juice, plus lemon wedges, to serve
a large pinch of paprika
2 ripe avocado, sliced
2 Little Gem lettuces, shredded
a large pinch of cayenne to finish
1. Bring a large pan of water to the boil & put the prawns in. Cook for around 3-4 minutes, until pink & cooked through. Drain the prawns once cooked and spread out on a plate to cool. When cool remove the head and shells of 6 prawns and cut each into 3 pieces. If you dont want your guest to peel the other prawns you can remove head and shell on these.
2. Meanwhile, mix together the mayonnaise, ketchup, Worcestershire sauce, lemon juice & paprika in a bowl. Taste &season with salt & pepper. Slice the avocado.
3. Once the chopped prawns are cool to the touch, mix with the sauce. Line 6 cocktail glasses with avocado slices around the sides & divide the shredded lettuce between them. Top with the prawn cocktail mixture & sprinkle with a little cayenne pepper. Dress with the other Prawns & Lemon Wedges & serve immediately.
