製作說明
- 預熱烤箱至攝氏135度(華氏275度)。
- 如果肋排背面還有一層薄膜,請將其去除。兩面均勻灑上適量的鹽和黑胡椒。如果你有使用香料調味粉,也可在此時一併塗抹在肋排上。
- 將肋排以肉面朝上放入一個大型烤盤或有邊烤盤中。(如果肋排太長,可以對半切開以便放入烤盤。)用鋁箔紙將烤盤密封蓋好,然後放入烤箱烘烤,直到肉質變得非常嫩、容易與骨頭分離,約需2.5至3.5小時。
- 烤2小時後檢查肋排的狀況。當肉質熟透且變得軟嫩時,即可視為完成。
燒烤醬製作
- 在肋排烘烤期間,開始準備燒烤醬。將橄欖油倒入平底鍋,以中火加熱。
- 加入洋蔥,炒至變軟、透明,約5至8分鐘。加入孜然粉再炒約30秒。
- 加入番茄醬、辣椒醬、紅糖與蘋果醋,攪拌均勻,加入鹽調味後煮約2分鐘。備用,等肋排烤好後使用。
最後步驟
- 從烤箱取出肋排,移除鋁箔紙,兩面均勻刷上剛才準備好的燒烤醬。
- (可選步驟):將烤盤移至烤箱上層,轉高火再烤3至4分鐘,直到燒烤醬略為焦糖化即可。(請密切注意,以免醬汁燒焦。)
