材料
- 350 毫升/12 液盎司 里奧哈紅酒(Rioja),或 350 毫升/12 液盎司 優質牛高湯
- 250 毫升/9 液盎司 義大利黑醋(Balsamic Vinegar)
- 125 克/4 盎司 西班牙辣腸(Chorizo)
製作說明
- 將烤箱預熱至 150°C/300°F/瓦斯爐 3 檔。
- 將羊膝以鹽和現磨黑胡椒充分調味。在厚底鍋中倒入少量食用油,開大火加熱。將火稍微調小後,將羊膝四面煎至金黃上色。
- 將紅酒與黑醋倒入鑄鐵鍋中,加熱煮沸約 5 分鐘。然後加入煎好的羊膝、大蒜、月桂葉、紅椒粉、黑胡椒粒、一半的迷迭香與牛高湯。蓋上鍋蓋後煮至沸騰。
- 湯汁煮滾後,將鍋子轉入預熱好的烤箱中烘烤 2 小時。
- 從烤箱中取出鍋子,加入西班牙辣腸、洋蔥、紅蘿蔔、蜂蜜(依口味添加)以及剩下的迷迭香,然後再放回烤箱繼續烹調 1 小時,或直到肉質軟嫩、幾乎從骨頭上自然脫落為止。
- 用有孔勺將羊肉與蔬菜撈出,放在盤中保溫備用。
- 將鍋子移回爐火上,以大火煮沸 8–10 分鐘,或直到醬汁略為濃稠。可依口味加鹽與現磨黑胡椒調味。
- 將羊肉與蔬菜搭配滑順的奶油馬鈴薯泥一同上桌,並淋上充足的濃郁醬汁享用。
