本食譜含有堅果
- 預熱烤架至中火。將柳橙汁倒入中型平底鍋中加熱,煮至減少一半。加入黑莓,煮約2分鐘。將混合物過濾至碗中,將黑莓另放一碗備用。
- 混合所有香料,將其中一些抹在鴨胸的皮面上。鴨胸撒鹽並淋上些許油。將鴨胸皮面朝下放上烤架,烤約3至4分鐘至表面結成酥脆外皮。翻面後繼續烤至五分熟,並每隔一分鐘左右刷上橙汁黑莓醬汁。烤好後移至大盤中。
- 將切面朝上的水蜜桃刷上油,撒上鹽與黑胡椒調味。將切面朝下放在烤架上,烤約2分鐘至微微焦化,再翻面烤約1分鐘。可將水蜜桃切面朝上圍繞鴨肉擺盤,或另放一盤。
- 在水蜜桃的凹陷處填入山羊起司,撒上芝麻葉與胡桃,再放上部分煮過的黑莓。剩下的黑莓可與鴨胸與水蜜桃一起搭配享用。
