烤牛排食譜

材料
- 4 塊去骨肋眼牛排或紐約客牛排,厚度約 1 1/4 至 1 1/2 吋(每塊約 12 盎司),或菲力牛排(每塊約 8 至 10 盎司),已修整
製作說明
- 約在烤牛排前 20 分鐘,將牛排從冰箱取出,蓋上蓋子,置於室溫下靜置。
- 將烤架加熱至高溫。將牛排兩面刷上油,並大量撒上鹽和黑胡椒調味。將牛排放上烤架,烤至金黃色並略帶焦痕,約 4 到 5 分鐘。將牛排翻面,繼續烤:三分熟(內部溫度約華氏 135 度)烤 3 到 5 分鐘,五分熟(華氏 140 度)烤 5 到 7 分鐘,七分熟(華氏 150 度)烤 8 到 10 分鐘。
- 將牛排移至砧板或大盤上,用鋁箔紙鬆鬆地蓋上,靜置 5 分鐘後再切片享用。
