如何準備醃製豬肚肉?
材料:
- 2 公斤(4 磅 6 盎司)豬肚肉,去除多餘脂肪,肋骨保持連接並從中間切開(但不要切到底)

- 醃製時間:過夜。將大蒜和鹽放入臼和杵中,研磨至粗糙狀。
- 在混合碗中,將大蒜和鹽與紅椒粉、奧勒岡、孜然粉和梅肯混合。慢慢加入白葡萄酒醋,將醃料放置一旁備用。
- 使用鋒利的刀,小心地去除豬肚肉的皮和多餘的脂肪。你也可以請肉商幫忙處理。用刀在豬肚肉的脂肪面和肋骨之間劃幾刀,然後將豬肚肉放入一個大烤盤中。將醃料倒在豬肚肉上,並將其均勻塗抹在整塊肉上。
- 將烤盤蓋好,放入冰箱醃製過夜(如果時間允許,也可以醃製 2 到 3 天)。
- 確保在烹飪之前將肉從冰箱取出並讓其回到室溫。將豬肚肉從醃料中取出,保留醃料汁以供後續塗抹。
