Ingredients:
- 2 lb boneless pork cut in 1 inch pieces
- 2 tbsp salad oil
- 1 14 oz pineapple chunks
- 1 can mushrooms
- 1/4 cup vinegar
- 1/3 cup molasses
- 2 green peppers cut in strips
- 2 onions sliced and cut into rings
- 1 1/2 tbsp cornstarch
- 2 tbsp water
Instructions:
- Brown pork on all sides in hot oil.
- Drain pineapple and mushrooms, reserving juice, combine all liquids to make 2 cups.
- Add liquid to pork and simmer until tender for 45 min.
- Stir in molasses and vinegar until blended.
- Add pineapple, mushrooms,peppers, onions,cover and cook 10 min.
- Keep veg., crisp.
- Blend cornstarch in water cook until thick.
- Serve over hot rice.
