Preparation Time: 20 mins Cooking Time: 10 Serving: 4 Ingredients:
4 Hoki fillets
3 teaspoon grated fresh ginger
2 lemons, finely grated zest and juice
1 tablespoon vegetable oil
1 large onion, chopped
1 teaspoon curry powder
1 teaspoon ground turmeric
1 teaspoon chopped and deseeded red chilli
1 cinnamon stick
400 gram can coconut milk
Method:
Combine the fish, ginger, lemon zest & juice in a non-metallic bowl. Cover and refrigerate for 20 minutes.
Heat the oil in a non-stick frying pan. Add the onion & cook until soft.
Add the curry powder, turmeric, chilli & cinnamon stick & cook for 30 seconds.
Pour in the coconut milk & stir until combined. Add the fish & the marinade and gently simmer for 5-7 minutes or until cooked.
Serve with mixed vegetables, rice and poppadum.
