Ingredients

  • 500g oysters (14-18 pieces)
  • Pepper
  • ½ cup all-purpose flour
  • 1 egg
  • ¾ cup fine panko breadcrumbs
  • 150g shredded cabbage and/or julienned cucumbers
  • Lemon wedges

Tartar Sauce

  • Mayonnaise
  • Finely chopped onion
  • Diced boiled egg
  • Finely chopped gherkin or cornichon
  • Lemon juice
  • Yellow mustard paste
  • Sugar, Salt and Pepper

Instructions

  1. Thaw or soak the oysters in a saltwater solution (about 3% salt) to mimic seawater.
  2. Make the tartar sauce by mixing mayonnaise, chopped onion, boiled egg, gherkin, lemon juice, yellow mustard, add sugar, salt, and pepper to taste.
  3. Pat dry and season the oysters with pepper.
  4. Coat each oyster in flour, then dip in beaten egg, and finally coat with panko breadcrumbs.
  5. Deep-fry the oysters at 160°C until golden brown, then remove and fry again at 180°C.
  6. Serve the fried oysters with shredded cabbage, julienned cucumbers, and lemon wedges, alongside tartar sauce.
