Ingredients
- 500g oysters (14-18 pieces)
- Pepper
- ½ cup all-purpose flour
- 1 egg
- ¾ cup fine panko breadcrumbs
- 150g shredded cabbage and/or julienned cucumbers
- Lemon wedges
Tartar Sauce
- Mayonnaise
- Finely chopped onion
- Diced boiled egg
- Finely chopped gherkin or cornichon
- Lemon juice
- Yellow mustard paste
- Sugar, Salt and Pepper
Instructions
- Thaw or soak the oysters in a saltwater solution (about 3% salt) to mimic seawater.
- Make the tartar sauce by mixing mayonnaise, chopped onion, boiled egg, gherkin, lemon juice, yellow mustard, add sugar, salt, and pepper to taste.
- Pat dry and season the oysters with pepper.
- Coat each oyster in flour, then dip in beaten egg, and finally coat with panko breadcrumbs.
- Deep-fry the oysters at 160°C until golden brown, then remove and fry again at 180°C.
- Serve the fried oysters with shredded cabbage, julienned cucumbers, and lemon wedges, alongside tartar sauce.
