How To Prepare Festive Prawn Cocktail?

Preparation Time: 5 mins Cooking Time: 10 mins Serving: 6

  • 1kg tiger prawns
  • 200g mayonnaise
  • 50g tomato ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp lemon juice, plus lemon wedges, to serve
  • a large pinch of paprika
  • 2 ripe avocado, sliced
  • 2 Little Gem lettuces, shredded
  • a large pinch of cayenne to finish
  1. Bring a large pan of water to the boil & put the prawns in. Cook for around 3-4 minutes, until pink & cooked through. Drain the prawns once cooked and spread out on a plate to cool. When cool remove the head and shells of 6 prawns and cut each into 3 pieces. If you don't want your guest to peel the other prawns you can remove head and shell on these.
  2. Meanwhile, mix together the mayonnaise, ketchup, Worcestershire sauce, lemon juice & paprika in a bowl. Taste &season with salt & pepper. Slice the avocado.
  3. Once the chopped prawns are cool to the touch, mix with the sauce. Line 6 cocktail glasses with avocado slices around the sides & divide the shredded lettuce between them. Top with the prawn cocktail mixture & sprinkle with a little cayenne pepper. Dress with the other Prawns & Lemon Wedges & serve immediately.
