Ingredients:
- 4 Saddle Tail Snapper fillets
- 2 tablespoons of olive oil
- Salt and pepper to taste
For pesto sauce
- 1 cup fresh basil leaves
- 1/4 cup grated Parmesan cheese
- 1/4 cup pine nuts or walnuts
- 1-2 garlic cloves, peeled
- 1/4 cup olive oil
- Salt and pepper to taste
How to Cook:
- Blend basil, garlic, pine nuts, Parmesan cheese, and olive oil until smooth for a pesto sauce. Season with salt and pepper to taste. Set aside for later use.
- Preheat your oven to 375°F.
- Season the snapper fillets with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the snapper fillets and cook for 3-4 minutes on each side or until golden brown.
- Transfer the fillets to a baking dish and bake for 5-7 minutes, or until the fish is cooked through.
- In a small bowl, mix the pesto sauce with a tablespoon of water to thin it out slightly.
- Spoon the pesto sauce over the cooked fish fillets.
- Serve immediately, garnished with fresh herbs or lemon wedges if desired.
