HOW TO PREPARE JOHN DORY FISH WITH ASIAN HERBS!

4 x OCEAN CATCH NEW ZEALAND JOHN DORY FILLET BONELESS AND SKINLESS
1Shallot, peeled and very finely chopped
1 Tbsp Mint leaves, finely sliced
½ cup Coriander leaves
1Red chilli, thinly sliced
3 cm Ginger, julienned
2 Tbsp Fish sauce
1 Tbsp Soft brown sugar
1 Tbsp Soy sauce
3 Limes, juice of
¼ cup Flour
1. To make herb salad, mix the shallot, mint, coriander, chilli & ginger together & set aside.
2. To make the dressing, mix the fish sauce, brown sugar, soy sauce & lime juice together & set aside.
3. Heat a frying pan on a high heat with some olive oil. Dust the john dory fillets with flour & season well with salt & pepper. Place the fillets in the pan & cook for 1 minute, then flip & cook for a further minute (Check the fish if thicker it may require further cooking on each side). Remove from the pan.
4. Place a handful of the herb salad on each fillet & spoon over the dressing.
