Ingredients
- 1 cup Arborio rice
- 2 cups lobster bisque
- 1 cup vegetable or chicken stock
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup white wine (optional)
- 2 tablespoons olive oil
- 1/2 cup grated parmesan cheese
- 200 g cooked lobster, chopped
- Fresh herbs (like parsley or chives) for garnish
- Salt and pepper to taste.
Instructions
- In a saucepan, heat the lobster bisque and stock together over low heat. Keep warm.
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Stir in the minced garlic and Arborio rice, cooking for 1-2 minutes until the rice is lightly toasted.
- If using, pour in the white wine and stir until absorbed.
- Gradually add the warm bisque and stock mixture, one ladle at a time, stirring constantly until the liquid is absorbed before adding more.
- After about 18-20 minutes, when the rice is creamy and al dente, stir in the lobster or crab meat, grated parmesan cheese, and season with salt and pepper.
- Serve hot, garnished with fresh herbs. Enjoy your delicious lobster risotto!
