How To Prepare Maryland Crab Cakes With Corn Salad?

Ingredients

  • 6 crab cakes
  • 3 cups corn kernels about 4 cobs of corn
  • 1 cup cherry tomatoes quartered
  • 1 cup cucumbers diced
  • ¼ cup red onion diced
  • 3 tablespoons olive oil
  • 3 tablespoons apple cider vinegar or rice vinegar
  • a generous sprinkle of course salt
  • pepper to taste
  • 1 tablespoon fresh parsley
  • fresh basil or dill chopped, optional

Instructions

  1. Cook the Maryland Crab cakes following the directions on the packaging for your cooking method whilst preparing the Corn Salad.
  2. Either boil or grill corn. Once cooked & cooled, remove kernels from corn.
  3. Combine all ingredients in a large bowl & gently toss.
  4. Season with salt & pepper to taste.
