How To Prepare North African Spiced Vegetables?

Ingredients:

  • 2 x EUROPEAN ORGANIC MIXED VEGETABLES (400G)
  • 1 ½ cups sweet potato (peeled and chopped)
  • 1 cup onions (sliced)
  • 2 cloves garlic cloves (finely chopped)
  • 1 ½ tbsps paprika
  • 1 tsp cumin powder
  • ½ tsp ras el hanout
  • ½ tsp black pepper
  • 4 tbsps olive oil
  • ⅔ cup vegetable stock
  • 1.333 cups cherry tomatoes (halved if necessary)

Instructions:

  1. Mix together the garlic, spices & the oil.
  2. Stir in the vegetables (apart from the tomatoes) & fry in a tagine on all sides.
  3. Add the stock, cover & braise on a medium heat for around 20 min.
  4. Add the tomatoes & simmer for another 5-10 min.
  5. Season to taste, sprinkle with coriander & serve immediately.
