Ingredients

  • 500g oysters (14-18 pieces)
  • ½ tablespoon cornflour
  • 3 slices of ginger
  • 2 green onions, cut into 5 cm pieces
  • 1 clove garlic, minced
  • 1 tablespoon Chinese cooking wine

Sauce

  • 3 tablespoons chicken stock
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon Chinese cooking wine
  • 1 teaspoon sesame oil
  • 2 tablespoons cornflour
  • White pepper

Instructions

  1. Clean the oysters in cold water, then soak in a mixture of ½ tablespoon cornflour and 1 teaspoon salt for 10 minutes. Rinse and drain well.
  2. Pat the oysters dry and coat lightly with cornflour.
  3. In a small bowl, mix all sauce ingredients. Set aside.
  4. Heat 1 tablespoon of oil in a skillet over medium-high heat and pan-fry the oysters until golden on both sides. Remove and set aside.
  5. In the same skillet, heat 2 teaspoons of oil. Add ginger and stir until fragrant, then add green onions and garlic. Stir-fry for 1 minute.
  6. Add 1 tablespoon cooking wine, cooking for another minute. Return the oysters to the skillet and pour in the sauce. Cook for 1 minute until the sauce thickens slightly, then serve on a plate.
