Ingredients
- 100 g brown sugar
- 80 ml maple syrup
- 1 teaspoon Chinese five spice
- 5 cans (440 g each) pineapple slices in juice, drained (juice reserved)
- 7-8 kg whole leg ham, on the bone
- 150 g glace cherries
- 500 ml water
Instructions
- Preheat the oven to 180°C. Place the oven shelf in the lowest position and line a large roasting pan with baking paper.
- In a saucepan, combine brown sugar, maple syrup, Chinese five spice, and 125 ml of reserved pineapple juice. Heat on low until the sugar dissolves, then simmer for 5 minutes.
- Cut a zig-zag pattern around the ham's shank and remove the rind. Decorate the ham with pineapple rings and glace cherries, securing with toothpicks as needed.
- Pour water into the roasting pan and place the ham on a wire rack. Brush one-third of the glaze over the ham and bake for 40 minutes. Rotate the pan, add half the remaining glaze, and bake for another 40 minutes until golden.
- Brush with the remaining glaze and let the ham rest for 15 minutes before carving. Remove toothpicks and enjoy!
