Ingredients

  • 2 pork chops, French cut
  • Olive oil, for frying
  • 2 garlic cloves, crushed (skin on)
  • Small bunch of thyme
  • Few knobs of butter
  • 1 red onion, peeled and thinly sliced
  • 2 bell peppers, thinly sliced
  • Sea salt and ground black pepper
  • 1 tbsp caster sugar
  • 3 tbsp red wine vinegar
  • 1 tbsp extra virgin olive oil
  • Small bunch of basil leaves, shredded

Instructions

  1. Heat olive oil in a large frying pan over high heat. Add the onion and peppers, season with salt, pepper, and sugar, and sauté for 4-5 minutes until softened.
  2. Add the red wine vinegar and let it bubble for a few minutes until reduced.
  3. Lower the heat, stir in the extra virgin olive oil, and cook for another 2-3 minutes. Add shredded basil and cook for 30 seconds, then transfer to a bowl to infuse.
  4. Prepare the pork chops by making shallow cuts in the fat and seasoning with salt and pepper. Rub well into the skin.
  5. Heat the frying pan until hot, then add a dash of oil, followed by the pork chops, garlic, and thyme. Fry for 2-3 minutes until coloured.
  6. Turn the chops and fry for another 2-3 minutes, pushing the thyme under the chops and breaking up the garlic slightly.
  7. Towards the end of cooking, add butter, tilt the pan, and baste the chops. Transfer to a plate, resting for 5-10 minutes, and serve on top of the peppers and onions.
