Ingredients
- 2 pork chops, French cut
- Olive oil, for frying
- 2 garlic cloves, crushed (skin on)
- Small bunch of thyme
- Few knobs of butter
- 1 red onion, peeled and thinly sliced
- 2 bell peppers, thinly sliced
- Sea salt and ground black pepper
- 1 tbsp caster sugar
- 3 tbsp red wine vinegar
- 1 tbsp extra virgin olive oil
- Small bunch of basil leaves, shredded
Instructions
- Heat olive oil in a large frying pan over high heat. Add the onion and peppers, season with salt, pepper, and sugar, and sauté for 4-5 minutes until softened.
- Add the red wine vinegar and let it bubble for a few minutes until reduced.
- Lower the heat, stir in the extra virgin olive oil, and cook for another 2-3 minutes. Add shredded basil and cook for 30 seconds, then transfer to a bowl to infuse.
- Prepare the pork chops by making shallow cuts in the fat and seasoning with salt and pepper. Rub well into the skin.
- Heat the frying pan until hot, then add a dash of oil, followed by the pork chops, garlic, and thyme. Fry for 2-3 minutes until coloured.
- Turn the chops and fry for another 2-3 minutes, pushing the thyme under the chops and breaking up the garlic slightly.
- Towards the end of cooking, add butter, tilt the pan, and baste the chops. Transfer to a plate, resting for 5-10 minutes, and serve on top of the peppers and onions.
