Preparation time: 15 mins Cooking Time: 30 mins Serving: 4Ā 

Ingredients:Ā 

  • 4 pork loin steaksĀ 
  • 1 tablespoon of olive oilĀ 
  • 2 shallots, finely choppedĀ 
  • 2-3 large field mushrooms or portobello mushrooms, choppedĀ 
  • 2 sprigs of rosemary, choppedĀ 
  • A splash of cognac or brandy (optional)Ā 
  • 1 tablespoon of flour (only if using cream instead of creme fraiche)Ā 
  • 80ml (1/4 cup) pork or chicken stockĀ 
  • 1 tablespoon of whole-grain mustardĀ 
  • 200g (2/3 cup) creme fraiche or heavy creamĀ 
  • Salt and pepper to tasteĀ 

Instructions:Ā 

  1. Season the pork loin steaks with sea salt.Ā 
  2. Heat a tablespoon of olive oil in a cast iron or stainless steel pan. Brown the pork loin steaks for no longer than 2 minutes on each side. Remove the pork and set it aside on a separate plate.Ā 
  3. In the same pan, add the chopped shallots. Cook them on medium heat, stirring constantly, for about 3 minutes. Then add the chopped mushrooms and rosemary, and continue cooking for an additional 5 minutes.Ā 
  4. Once the shallot and mushroom juices have evaporated and the pan is dry, add a splash of cognac while scraping the burnt bits with a wooden spoon. If you're using cream instead of creme fraiche, sprinkle in the flour and stir to combine.Ā 
  5. Add the stock, whole-grain mustard, and creme fraiche to the pan. Stir everything together.Ā 
  6. Return the pork loin steaks to the pan. Bring the mixture to a boil, then reduce the heat and let it simmer for 2 minutes. Remove the pan from the heat.Ā 
  7. Taste the sauce and add salt and pepper as needed.Ā 
  8. Serve the pork loin steaks with the sauce, along with rice or potatoes.Ā
