Ingredients

  • 150 g salmon fillet with skin
  • 1 teaspoon extra-virgin olive oil (plus more for drizzling)
  • 1/2 tablespoon fresh chives, chopped
  • 1/2 tablespoon fresh tarragon leaves

Instructions

  1. Preheat the oven to 220°C (425°F).
  2. Rub the salmon with 1 teaspoon of olive oil and season with salt and pepper.
  3. Place the salmon skin-side down on a foil-lined baking sheet. Roast in the upper third of the oven for about 12 minutes, until just cooked through.
  4. Carefully cut the salmon in half and lift the flesh off the skin using a spatula. Discard the skin if you don’t eat it.
  5. Drizzle with extra olive oil and sprinkle with chopped chives and tarragon. Enjoy!
