Ingredients
- 150 g salmon fillet with skin
- 1 teaspoon extra-virgin olive oil (plus more for drizzling)
- 1/2 tablespoon fresh chives, chopped
- 1/2 tablespoon fresh tarragon leaves
Instructions
- Preheat the oven to 220°C (425°F).
- Rub the salmon with 1 teaspoon of olive oil and season with salt and pepper.
- Place the salmon skin-side down on a foil-lined baking sheet. Roast in the upper third of the oven for about 12 minutes, until just cooked through.
- Carefully cut the salmon in half and lift the flesh off the skin using a spatula. Discard the skin if you don’t eat it.
- Drizzle with extra olive oil and sprinkle with chopped chives and tarragon. Enjoy!
