Ingredients

  • Beef short ribs
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • Olive oil
  • 1 garlic bulb
  • 2 teaspoons tomato purée
  • 1 bottle of red wine
  • Beef stock or chicken stock
  • Bacon bites, chestnut mushrooms, and parsley for garnishing

Instructions

  1. Cut the short ribs along the bones and season with salt and pepper.
  2. Heat the olive oil in a frying pan. Add the ribs and fry until they are dark and rich in colour.
  3. Slice the garlic bulb in half and place it alongside the ribs to infuse flavour.
  4. Stir in the tomato purée to create a saucy gravy. Pour in the entire bottle of red wine, bring to a boil, and then reduce the heat.
  5. Add the stock (beef or chicken) and cover the pan with aluminium foil. Cook for 2.5 hours at about 170°C to 180°C.
  6. Once cooked, mash the garlic and sieve it to create a smooth sauce. Garnish with fried bacon bites, mushrooms, and parsley before serving.
