Ingredients

  • 4 kg pork shoulder
  • 8 bay leaves
  • 1 tablespoon juniper berries
  • Kosher salt and pepper
  • 6 baking apples (e.g., Gala), quartered and cored
  • 60 ml extra-virgin olive oil
  • 3 small cinnamon sticks

Instructions

  1. Preheat the oven to 200°C (400°F). Score the pork skin in a crosshatch pattern and place the pork in a large roasting pan, skin side up.
  2. In a spice grinder, combine bay leaves, juniper berries, 60 g salt, and 2 teaspoons pepper. Grind into a powder and rub all over the pork.
  3. Roast the pork for 30 minutes until lightly browned. Reduce the temperature to 160°C (325°F) and roast for about 6.5 hours until tender and the skin is crisp. Let rest for 30 minutes.
  4. On a baking sheet, toss the quartered apples with olive oil and cinnamon sticks. Season with salt and pepper. Roast for about 30 minutes until lightly browned and softened. Discard the cinnamon sticks.
  5. Remove the pork skin, chop it coarsely, and pull the pork into large pieces using forks. Serve the pork on a platter with the chopped skin and roasted apples. Enjoy!
