Stir-Fry Chicken Thigh Mince Recipe

Ingredients:
- 500g chicken thigh mince
- 1 tbsp olive oil
- 1 large onion, chopped2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup broccoli florets
- 1/2 cup snow peas
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp sesame oil
- 1 tsp grated ginger
- 1/2 tsp black pepper
- Cooked rice or noodles, for serving
Instructions:
- Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken mince and cook, breaking it up with a spoon, until browned.
- Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
- Add the bell peppers, broccoli, and snow peas to the skillet and cook until tender-crisp, about 5 minutes.
- In a small bowl, whisk together the soy sauce, honey, sesame oil, ginger, and black pepper.
- Pour the sauce over the chicken and vegetables and stir to combine.
- Cook for 1-2 minutes, or until the sauce has thickened slightly.
- Serve immediately over cooked rice or noodles.
