Know Your Meat Cuts – Lamb Cutlets?
Lamb cutlets are a delicious cut that only take a short time to cook. The most common method is to griddle or barbecue the cutlets, but they can be roasted in the oven too. Always remove the lamb from the fridge an hour before cooking to allow it to come to room temperature.
Lamb Cutlets are taken from the ribs of the lamb when a number of them are left together and cooked as a whole, they’re called a rack of lamb. Chops and racks can be French trimmed, where the meat is scraped from the ends of the rib bones, which looks super-impressive on a plate.
