Ingredients

  • 350g pork meatballs
  • 3L chicken broth
  • 60ml soy sauce
  • 1 tablespoon grated ginger
  • 1 teaspoon rice vinegar
  • 400g no yolks extra broad noodles
  • 1L baby spinach
  • 1/2 teaspoon crushed red pepper flakes
  • 3 green onions, thinly sliced
  • Lime wedges, for serving

Instructions

  1. In a large pot, combine chicken broth, soy sauce, grated ginger and rice vinegar. Bring to a boil.
  2. Add the no yolks extra broad noodles and drop in the pork meatballs. Reduce the heat to a simmer.
  3. Cook for about 15 minutes, stirring occasionally, until the noodles are tender and the meatballs are cooked through.
  4. Stir in the baby spinach until wilted, then add crushed red pepper flakes to taste.
  5. Serve the soup in bowls, garnished with sliced green onions and lime wedges.
