Ingredients
- 350g pork meatballs
- 3L chicken broth
- 60ml soy sauce
- 1 tablespoon grated ginger
- 1 teaspoon rice vinegar
- 400g no yolks extra broad noodles
- 1L baby spinach
- 1/2 teaspoon crushed red pepper flakes
- 3 green onions, thinly sliced
- Lime wedges, for serving
Instructions
- In a large pot, combine chicken broth, soy sauce, grated ginger and rice vinegar. Bring to a boil.
- Add the no yolks extra broad noodles and drop in the pork meatballs. Reduce the heat to a simmer.
- Cook for about 15 minutes, stirring occasionally, until the noodles are tender and the meatballs are cooked through.
- Stir in the baby spinach until wilted, then add crushed red pepper flakes to taste.
- Serve the soup in bowls, garnished with sliced green onions and lime wedges.
