How To Prepare Barbecued Standing OP Beef Rib Roast?

Ingredients:
- 2kg Australian Premium Black Angus OP-Rib
- 3 tbsp olive oil
- ¼ cup fresh sage leaves, chopped
- Zest of 1 lemon
- 2 tbsp pistachios, toasted, finely chopped +extra, to serve
- ¼ cup panko breadcrumbs
- 4 bay leaves
- 3 cloves garlic, crushed
- 4 zucchini, sliced diagonally
- 2 heads broccoli, cut into florets
- 4 x 175g packets microwavable vegetable cous cous
- Parsley leaves, horseradish cream, to serve
Instructions:
- Portion the OP-Rib Primal Cut into the KG weight required for cooking. Based on approx 2KG weight
- Preheat a barbecue with all burners on to 200ºC.
- In a bowl combine half the oil, sage, lemon zest, pistachios & breadcrumbs. Season. Tuck bay leaves under the string. Lightly spray beef with oil, season, & top with sage crust.
- Place beef in the centre of barbecue & turn burners directly under it off. Leave the remaining burners on to conduct & circulate heat around beef. Close lid & cook beef for 80 minutes for rare, 100 minutes for medium &120 minutes for well done. For ease & accuracy use a meat thermometer. Remove beef, cover loosely with foil, & rest for 20 minutes before thinly slicing.
- While meat is resting, place remaining oil, garlic, zucchini & broccoli in a large bowl. Season & toss to coat. Barbecue vegetables, in batches, for 5 to 6 minutes or until charred & tender.
- Prepare cous cous according to packet instructions.
- Serve sliced beef with vegetables & cous cous. Sprinkle cous cous with parsley & extra pistachios. Serve with horseradish cream.
