How To Prepare Beef Tenderloin Skewers With Mustard Horseradish Cream?

Ingredients:
  • 700g beef tenderloin
  • 20 x 3-inch rosemary stems, leaves removed
  • 1/4 cup olive oil 
  • 1 tablespoon packed light brown sugar 
  • 1 tablespoon Worcestershire sauce 
  • 1 tablespoon packed light brown sugar 
  • 2 teaspoons mustard powder 
  • 2 teaspoons ground cumin 
  • 1 teaspoon coarse salt 
  • 1/2 teaspoon ground black pepper 
  • 5 cloves garlic, smashed and chopped 1/4 cup olive oil 
  • 2 small limes, juiced 
Mustard Horseradish Cream:
  • 1 cup sour cream
  • 1/3 cup prepared horseradish 
  • 2 tablespoons spicy mustard 
  • 1/4 teaspoon salt 
  • Pinch ground black pepper 
Method:
  1. For the tenderloin skewers: Take the diced meat & add to skewers with a rosemary sprig pushed into the cube of meat. Place in a shallow dish & set aside.
  2. In a small bowl, whisk to combine the olive oil, light brown sugar, Worcestershire sauce, mustard powder, cumin, salt, pepper, garlic & lime juice. Pour the marinade over the meat, making sure to coat all the pieces. Cover & let marinate for at least 30 minutes.
  3. For the mustard horseradish cream: in a small bowl, stir to combine the sour cream, horseradish, mustard, salt & pepper.
  4. Heat a grill for cooking over medium-high heat. Grill the skewers until cooked through, depending on your doneness about 1 to 2 minutes per side. Serve with the mustard horseradish cream.
  5. Plate with all your favourite salads and dressings.
