- 700g beef tenderloin
- 20 x 3-inch rosemary stems, leaves removed
- 1/4 cup olive oil
- 1 tablespoon packed light brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon packed light brown sugar
- 2 teaspoons mustard powder
- 2 teaspoons ground cumin
- 1 teaspoon coarse salt
- 1/2 teaspoon ground black pepper
- 5 cloves garlic, smashed and chopped 1/4 cup olive oil
- 2 small limes, juiced
- 1 cup sour cream
- 1/3 cup prepared horseradish
- 2 tablespoons spicy mustard
- 1/4 teaspoon salt
- Pinch ground black pepper
- For the tenderloin skewers: Take the diced meat & add to skewers with a rosemary sprig pushed into the cube of meat. Place in a shallow dish & set aside.
- In a small bowl, whisk to combine the olive oil, light brown sugar, Worcestershire sauce, mustard powder, cumin, salt, pepper, garlic & lime juice. Pour the marinade over the meat, making sure to coat all the pieces. Cover & let marinate for at least 30 minutes.
- For the mustard horseradish cream: in a small bowl, stir to combine the sour cream, horseradish, mustard, salt & pepper.
- Heat a grill for cooking over medium-high heat. Grill the skewers until cooked through, depending on your doneness about 1 to 2 minutes per side. Serve with the mustard horseradish cream.
- Plate with all your favourite salads and dressings.
