Preparation Time: 30 mins + 1 hr marination Cooking Time: 30 mins Serving: 4

Ingredients:

  • 800g bavette steak
  • 2 garlic cloves, minced
  • 3 tablespoons mustard
  • 4 large potatoes
  • 2 tomatoes, diced
  • 1 red onion, diced
  • ¼ bunch parsley, chopped
  • 140ml olive oil
  • Salt and pepper

Instructions:

  1. In a bowl, combine minced garlic, 2 tablespoons of olive oil, mustard, and a pinch of black pepper. Mix well.
  2. Place the beef steak in a shallow dish and pour the marinade over it. Ensure the steak is well coated. Cover the dish and refrigerate for 1 hour to allow the flavors to meld.
  3. While the steak is marinating, cook the unpeeled potatoes in boiling water for about 12 minutes or until they are tender. Once cooked, remove them from the water and let them cool.
  4. Once the potatoes have cooled, place them on a cutting board. Using a fork or your hands, gently press down on each potato to crack the skin and flatten them slightly.
  5. Heat a frying pan over medium heat, add 2 tablespoons of olive oil, and place the flattened potatoes in the pan. Cook them for a few minutes on each side until they turn golden brown. Remove from heat and set aside.
  6. In a separate bowl, combine the diced tomatoes, red onion, chopped parsley, minced garlic, and the remaining 80ml of olive oil to make the salsa. Season with salt and pepper according to your taste.
  7. Preheat a grill or grill pan over high heat. Remove the steak from the marinade and discard the excess marinade. Cook the steak on the grill for about 6 minutes on each side for a medium-rare doneness. If you prefer your steak more well-done, cook it for a few minutes longer on each side. Once cooked, remove the steak from the grill and let it rest for 5 minutes to allow the juices to redistribute.
  8. After resting, thinly slice the steak against the grain.
  9. Serve the sliced steak with the browned potatoes and the salsa on the side.
