Ingredients:
- 4 halibut fillets
- 1/4 cup olive oil
- 2 tablespoons white wine
- 2 tablespoons lemon juice
- 2 garlic cloves, finely chopped
- 2 tablespoons chopped fresh chives
- 1 tablespoon fresh thyme, finely chopped
- Salt and freshly ground pepper
For the salsa:
- 300g grape tomatoes, finely diced
- 1/4 cup peeled Cortland apple, finely diced
- 3 tablespoons finely chopped fresh cilantro
- 2 tablespoons finely chopped red onion
- 1 tablespoon lemon juice
- Olive oil
- Salt and freshly ground pepper
Instructions:
- In a bowl, combine the marinade ingredients: olive oil, white wine, lemon juice, garlic, chives, thyme, salt, and pepper. Toss well to mix.
- Place the halibut fillets in a large airtight bag and pour the marinade over them. Remove the air from the bag and mix well to coat the fish. Refrigerate for 1 hour.
- In a separate large bowl, combine the salsa ingredients: grape tomatoes, Cortland apple, cilantro, red onion, lemon juice, olive oil, salt, and pepper. Toss to combine. Refrigerate for later use.
- Preheat the grill to medium heat. Place a cooking sheet on the grill and let it warm up for 2 minutes.
- Remove the marinated fish from the bag and place it on the cooking sheet. Close the grill lid and cook for 6 minutes.
- Gently flip the halibut fillets and close the lid again. Continue cooking for another 6 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve the grilled halibut immediately, garnished with the fresh salsa.
