How To Prepare Red Wine Sauce Lamb Rack?

Preparation Time: 15 mins Cooking Time: 1 hour Serving: 2-4


  • 2 cutlets of lamb racks
  • salt & pepper to taste
  • 2 tablespoon of olive oil

For Red Wine Sauce:

  • Half chopped onion
  • 1 cup of red wine
  • 1 teaspoon fresh rosemary (1/4 teaspoon dried also nice)
  • 1 teaspoon chopped chives
  • 1 teaspoon of fresh thyme
  • 1 tablespoon of unsalted butter
  • 1 cup beef stock
  • salt & pepper to taste


Cook the Lamb Rack:

  1. Preheat the oven to 200 degree
  2. Rub the lamb with salt & pepper to marinate 
  3. Put olive oil on skillet over mid high heat. 
  4. Place the lamb rack in the skillet by facing the meaty downward.
  5. Sear until all sides are nicely browned.
  6. Transfer the skillet to oven and ready to roast for 30-40 minutes.
  7. Take out the lamb rack for rest.

Prepare the Sauce:

  1. Use the cooked skillet with the juice, add in the chopped onion, beef stock & red wine. Boil it and turn into medium heat then stir for few minutes.
  2. Add in the chives, thyme, butter
  3. Season the sauce with salt & pepper.

Ready to serve with red wine sauce. Happy eating!
