How To Prepare Wagyu Beef Burger with Caramelised Onions?

Preparation Time: 10 mins Cooking Time: 45 mins Serving: 3

Ingredients:

  • 3 Wagyu Beef Burger
  • 3 Brioche buns
  • salt
  • fresh ground black pepper
  • 4 tablespoons butter divided
  • 3 slices White Cheddar

Red Wine Caramelized Onions

  • 1 large sweet onion
  • ½ tablespoon butter
  • ½ tablespoon cooking oil
  • 2 tablespoons red wine
  • Salt

Roasted Garlic Aioli

  • 4 cloves garlic
  • ⅓ cup Mayo

Method:

  1. Spread butter onto the inside of the top & bottom bun slice & lightly toast, butter side down, in 12" pan on medium heat until the cut side of the bun develops a crispy, toasted, exterior. Turn off the heat once done & remove the buns and set aside.
  2. Season each side of the patty liberally with salt & pepper. Add enough butter to coat the bottom of a cast-iron pan heated to medium high & gently place in the beef burgers once it has melted.
  3. Once in the pan, do not move the beef burgers, or squash the meat. After ~2 minutes of cooking, flip each beef burger & add a slice of cheese to the top of the patty while the burger finishes cooking. Remove from the skillet while burgers are rare, or medium rare (~125 degrees).
  4. Place patty on toasted bun slathered with roasted garlic aioli, & topped with caramelized onions.

Red Wine Caramelized Onions (Prepare in advance)

  1. Slice ends off of onions, cut in half & then cut into strips.
  2. Add butter & oil into frying pan & heat to medium low.
  3. Add onions & salt to taste.
  4. Cook 45 minutes, stirring occasionally to prevent scorching, until onions are brown & sticky.
  5. When onions are caramelised deglaze the pan with red wine & stir liquid into onions. Remove onions from pan & set aside, keeping warm.

Roasted Garlic Aioli (Prepare while onions caramelize)

  1. Roast garlic cloves in oven pre-heated to 375 for 30 minutes, or until cloves are soft to the touch. Check regularly to ensure they do not overcook.
  2. Smash the cloves into a paste & mince with knife to ensure they are fully separated.
  3. Mix with mayo & set aside.

Now build the beef burger toping with the onions & garlic & the top of the bun & serve with you favourite chips & salad.
