Ingredients
- 2 lamb steaks (striploin or tenderloin)
- 2 courgettes
- 2 tbsp olive oil
- 2 garlic cloves, chopped
- 10 cherry tomatoes, halved
- Chopped parsley or coriander
Instructions
- Chop the courgettes into large chunks and boil or steam until tender, about 5 minutes. Drain in a colander and lightly press out as much liquid as possible using a potato masher or fork. Then, chop the courgettes into smaller pieces.
- Heat the olive oil in a pan, add the chopped garlic and cherry tomatoes, and fry briefly until the tomatoes are just beginning to soften. Stir in the courgettes and heat through, then add the chopped parsley or coriander and mix well. Keep warm.
- Season the lamb steaks and grill for 3-4 minutes on each side. Serve with the tomato and courgette crush on the side.
