Cantonese Roast Pork Recipe
Ingredients:
Pork
- 2 lb pork tenderloin cut into 1 inch thick strips
Marinade
- 3/4 cup soy sauce
- 1/4 cup sherry
- 1/4 cup sugar
- 1/2 tbsp red food coloring (optional)
- 2 tbsp hoisin sauce
Sugar Baste
- 1 tbsp sugar
- 1 tbsp hot water
Instructions:
- Mix the soy sauce, sugar, sherry, red food coloring, and hoisin sauce together. This is you marinade.
- Marinate the pork for minimum 1 hour
- Cut pork into 1 inch thick strips the length of the tenderloin. get charcoal smoker going with the water bowl between the meat rack and fire. lay the strips on the top rack.
- Reserve the marinade and boil 7 minutes.
- Mix the sugar and water and heat 3 minutes.
- Baste the sugar water on pork. Cook till done.
- Add pork back to marinade for 1 hour. Its done
