Ingredients:
- 1 large ham
- 1/2 cup Dijon mustard
- 1/2 cup brown sugar
- 1 teaspoon dried thyme
- 1 cup pineapple juice
- Pineapple rings (fresh or canned)
- Maraschino cherries (for garnish)
Instructions:
- Preheat your oven to 175°C (350°F) and position the oven rack in the middle.
- In a small bowl, mix together the Dijon mustard, brown sugar, and thyme.
- Place the ham, fat side up, in a large roasting pan. Rub the mustard glaze all over the ham. Pour the pineapple juice into the bottom of the pan.
- Bake the ham for 2 hours, basting it with the pineapple juice every 20 minutes.
- After 2 hours, take the ham out from the oven, and increase the oven temperature to 200°C (400°F).
- Use toothpicks to attach pineapple rings around the ham, placing a cherry in the centre of each ring. Lightly sprinkle the pineapple rings with brown sugar.
- Return the ham to the oven, uncovered, and bake until the pineapple rings turn a light golden brown. Rest for 15 minutes before slicing.
