New Zealand is renowned for its lamb produce and the French cut lamb rack is definitely the most popular in the Hong Kong.
The Lamb Rack is prepared from the side of the lamb by removing the forequarter using a straight vertical cut along the rib bone and a horizontal cut along the top of the flap. It contains rib bones, backbone and thick, meaty rib eye muscle. Reaching its full potential when roasted, the rack is usually further prepared by the removal of the cap and by frenching the bones.

Our butchers cut to order as accurately as possible but there maybe a +/-10% variance. Our products are snap frozen to maintain its texture, flavour and for ease of transport across Hong Kong.
When Butchering from the Primal Cut the individual steaks may vary in size and thickness to meet the weight specification.
